Based on a recipe from my mom.
4 fairly ripe bananas
1/2 cup milk
1/2 cup egg beaters (roughly the equivalent of 2 eggs)
1/4 cup olive oil
1/2 cup granulated sugar
1 tsp ground cinnamon
3 cups bisquick pancake mix
3 cups oatmeal
1 cup dried cranberries
Pre-heat oven to 400F.
Blend bananas, milk, egg beaters, and oil. In a blender. Until blended.
Mix bisquick and oatmeal in a bowl, using a mixer (with spatula assist). Pour in liquid and mix some more. Resulting mixture should be fairly thick.
Add cranberries and stir.
Spoon into muffin tins, filling almost to the brim.
Bake for n minutes. The value of n is determined by the "stick a fork in me, I'm done" method.
For me, this was enough for 21 3-inch muffins. I only preheated my oven for 10 min so for me n was about 22. But the recipe said you should start checking after 10 min, so perhaps I should have preheated longer.
Result: not as good as Mom makes, but still good. They tasted a bit buttery (which was good) and a bit pancakey (which was ok but not necessarily great). I think next time I'll try replacing some of the bisquik with something else.
